Chocolate Tart with Pear Sorbet

 

Students from Newbury College have had a busy and rewarding half-term showcasing their culinary talents through a series of catering events that highlighted the skills and dedication of the next generation of hospitality professionals.

Thatcham Bowls Club

The term kicked off with the Thatcham Bowls Club Award Ceremony on 04 October. Students planned and delivered a professional dining experience for local players and community members, recognising their achievements over the past year. Organised in collaboration with Shaun Yeo, who has strong ties to both the club and the College, the event gave students experience of catering at an external venue, using unfamiliar equipment and adapting to a new environment.

Shaun Yeo praised the students, saying: "What a great evening, the food was fantastic. Credit to your students—they have done a great job tonight." The Bowls Club President added, "We didn’t know the College had a restaurant, but we will surely try it."

La Soirée Française

On 24 October, the College hosted a spectacular French-themed evening, "La Soirée Française," featuring a six-course menu with expertly paired wines. The evening allowed students to refine their skills in creating and serving a sophisticated menu, including dishes like Croquette d’escargot and Carré d’agneau en croûte persillée, complemented by premium wines.

Customers were impressed by the students’ creativity and flair. Many guests left eagerly anticipating the next special evening, with several tables requesting advance reservations. One diner remarked, "When is the next one, please book us already!”

Christmas Dinners

The term concluded with students serving nearly 700 Christmas meals to the public and staff during December, culminating in a staff lunch on 19 December. Featuring a menu of seasonal favourites such as traditional Norfolk turkey with all the trimmings and house Christmas pudding with brandy sauce, these events brought festive joy and showcased the students’ ability to cater to high volumes without compromising on quality.
