  • Description

    Develop your skills as a chef through advanced practical cookery, creative food preparation and professional kitchen experience.

    You will build on the techniques developed at Level 2 and learn how to prepare and present more complex dishes to a high standard. Alongside your practical training, you will develop your understanding of kitchen organisation, food costs, food safety and the wider responsibilities involved in working professionally in hospitality.

    You will explore:

    • Fish and shellfish
    • Patisserie and desserts
    • Flavour combinations and ingredient pairing
    • Plating and food presentation
    • Working with high-quality ingredients

    Practical sessions will give you regular opportunities to refine your techniques, experiment with presentation and develop greater independence in the kitchen. You will learn how to organise your work effectively, manage your time and produce dishes consistently to professional standards.

    As you progress, you will be expected to take greater responsibility for planning and completing your work, responding to feedback and maintaining high standards even when working under pressure.

  • Entry requirements

    You will normally need:

    • Five GCSEs at grade 4 or above, including English and Maths
    • An appropriate Level 2 vocational qualification in Professional Cookery, or equivalent relevant industry experience

    This programme builds on existing practical cookery skills and knowledge, so you should already be confident with the essential techniques used in a professional kitchen and be ready to work at a more advanced level.

  • Assessment

    The Advanced Professional Cookery qualification is assessed through a combination of practical assessments and theory-based assignments.

    Your practical skills will be assessed as you prepare and present complex dishes to the required standard. You will need to demonstrate advanced cookery techniques, effective organisation, safe working practices and the ability to produce consistent results.

    Your knowledge and understanding will also be assessed through assignments and projects covering areas such as kitchen management and food safety.

    Your tutors will provide feedback throughout your practical work and assessments to help you refine your techniques, improve your presentation and develop the professional standards expected in a commercial kitchen.

  • Home study

    You should expect to complete around 4 to 6 hours of independent study each week.

    This may include:

    • Revising professional cookery theory
    • Preparing for assessments and exams
    • Researching ingredients and advanced techniques
    • Planning dishes and practical work
    • Researching food trends and sustainability
    • Completing theory-based assignments
    • Reviewing food costs and kitchen management topics
    • Reflecting on feedback and identifying areas for improvement

    You may also be required to take part in restaurant services outside your normal timetabled sessions as part of developing your professional experience.

    At Level 3, you will be expected to take increasing responsibility for managing your workload, preparing thoroughly for practical sessions and assessments and meeting deadlines.

  • Work placement

    You will take part in practical experiences that help you develop the professional standards expected in commercial kitchens and hospitality businesses.

    You will have opportunities to gain experience through the College's in-house restaurant and canteen, developing your skills in food production and front of house service.

    External work placements may also give you experience of busy commercial environments and the opportunity to apply your advanced cookery skills in a professional workplace.

    Depending on the opportunities available during your programme, you may also:

  • Fees and additional costs
    • All full-time students are asked to contribute £15 towards the College Subscription Fund
    • You will need chef's whites suitable for professional kitchen sessions
    • You will need appropriate kitchen tools and equipment
    • Details and costs for required clothing and equipment will be provided before enrolment
    • Optional visits, workshops or industry activities may have an additional cost, and you will be given information in advance
